Inspired by Democratic vice-presidential candidate Tim Walz’s video of a campaign stop in Nebraska where he grew up, spouse B made runza for the first time.
He chose a classic beef and cabbage filling and made his own bread dough because that’s how he rolls!

I just finished eating some yummy apple cinnamon scones that B made.
It’s a recipe that he developed starting from a Bisquick base, so it is quick to put together. Less measuring than working totally from scratch, which he also does.
One of my favorite scratch recipes is his pumpkin scones, for which we often use frozen honey nut squash. Well, you do have to thaw the squash first. In the fall when the farm stands are about to close and are selling winter squash by the box, we often buy a bunch of honey nut squash to bake, mash, and portion out to freeze so that we can use it for recipes for months to come.
But today, the apple cinnamon scones hit the spot.
Starting from the Bisquick base, it’s easy to make lots of variations. Besides fresh fruits, like apples, peaches, or plums, we use dried fruits, such as cranberries, currants, or raisins. There are lots of variations for the recipe, depending on what you have on hand.
We also add a bit of sugar, white or brown, and spice, often cinnamon but possibly nutmeg or cardamon, depending on what we use for fruit.
I hope I’m not making you hungry….

It’s been a busy week and I didn’t look at Linda’s Stream of Consciousness Saturday post until just now, early Saturday morning. (Linda puts it out on Friday so folks have a bit of a heads-up, although huge amounts of advanced planning, as well as edits, are against the SoCS rules.)
As it happens, my post yesterday goes very well with the SoCS prompt today, which is “bake.”
I wrote yesterday about a poem that was just published by Silver Birch Press, “My husband and daughters make Christmas gingerbread.” Yes, it’s “make” rather than “bake” in the title, but baking is definitely involved in the poem.
B has turned into the main baker in the house. This year, with no visits from extended family planned and just the three of us at home, B is not doing our usual Christmas practice of having at least a half dozen kinds of cookies available at once. Instead, he is doing serial baking. So far, he has made pfeffernüsse and pecan puffs.
No gingerbread yet, but I’m sure it will be coming…

It’s no secret that submitting poetry for publication is mostly an exercise in rejection, but this week is a time to share some successes. Yesterday, I posted about the publication of three poems in Emulate. Today, I’m happy to share that Silver Birch Press has published my poem “My husband and daughters make Christmas gingerbread” as part of their SPICES & SEASONINGS Series! Many thanks to Melanie and the Silver Birch Press team for including me in this several-months-long-and-counting series!
I submitted to the series back in late August and received the acceptance notification in early September, but assumed, correctly, that they would hold publication until Christmas-cookie-baking season. It’s fun and festive to have it appear now. (Photo is some of our gingerbread from 2010.)
This poem started with a prompt from Heather Dorn in December, 2015, when she was facilitating a women’s poetry workshop called Sappho’s Circle. The middle “action” section of the poem descends from that time. When the Silver Birch Press call for submissions came in this summer, calling for writing about a specific spice or seasoning, I immediately thought of that poem and set about revising it to “spice it up.”
B and I have often discussed how it is the amount of clove in these cookies that distinguishes them so that became the focus of the new opening and closing sections. I was also able to workshop the poem with my fellow Grapevine Poets before submitting to Silver Birch Press.
As it happens, Silver Birch published the poem on their site yesterday, so I was able to share it via social media then, while waiting to do the blog post today, given that I had already posted about the poems in Emulate yesterday and wanted to spread the poetic good news reporting out a bit here at Top of JC’s Mind.
Because of that, I’ve already had a number of comments on Facebook about the poem. One from my college roommate was especially touching, as she referenced her “unexpected joy” at seeing her mother’s words in the cookbook inscription in my poem. My eyes welled with tears, remembering our moms, both of whom died a few years ago.
In workshopping this poem, there was discussion about how much detail to leave in the poem and how much to cut. There is always a tension in revision on this point and I admire poets who can choose just the right detail to impact their audience. I tend to be guilty of too much detail, which sometimes leads to comments of “why should I care?” about some detail or other. I’m grateful, though, that I chose to leave that particular detail in this poem.
Granted, no other reader may have found that specific moment of joy from this poem, but, perhaps, there is another detail that struck them, that reminded them of family or baking or Christmas tradition. It’s not something that I’m likely to ever know.
This poem has been described to me as “lovely” and “charming.” I realize that others would term it overly sentimental or unsophisticated.
Perhaps, it is all of those things.
I do know, though, that it is authentic to who I am as a poet and as a person. I think – or, at least, I hope – that comes through to those who encounter my work.

Spouse B, daughter T, and I were on our own this Christmas. While we had originally hoped that daughter E, son-in-law L, and granddaughters ABC and JG were going to be able to join us from London, UK, circumstances prevented that, probably a blessing in disguise given the travel disruptions caused by the extreme weather here in the US.
We here in Broome County, New York, were spared the worst of the storm. While it was cold and windy, we didn’t get a lot of snow and ice. Our hearts go out to places that suffered flooding or blizzard conditions. Erie County, about 200 miles to our west, has reported 25 deaths so far from the intense blizzard.
I did change my plan for when I went to church, in deference to the cold. I decided to attend the 4 PM vigil rather than the 10 PM. We had a prelude program from a wonderful brass quintet from Southern Tier Brass. I especially appreciated their rendition of “Lo, How a Rose” which was arranged from the Brahms organ chorale prelude that I learned when I was in college and which has always been a favorite of mine.
I also loved the introduction to the liturgy, which welcomed everyone whatever their state in life. It meant a lot to me to hear such an explicit statement of universality. The word catholic means universal but the Church has often strayed from that concept. I appreciated hearing this all-encompassing welcome at Christmas-time when people who aren’t members are often in attendance while visiting family or friends.
In the evening, B, T, and I watched Miracle on 34th Street, which is celebrating its 75th anniversary this year. T had never seen it and it had been many years since B and I had watched it. It was a sweet way to spend Christmas Eve.
In the morning, we enjoyed cranberry and date nut bread so breakfast, made by B who does a lot of the cooking and baking, especially over the holidays. We opened stockings and gifts. I was especially pleased to receive a 10th generation iPad from B; our current one is 2nd generation, so definitely a step up!
We had a chance to video chat with our London family when it was mid-morning here and mid-afternoon there. The energy of a two- and a five-year-old was palpable, even five time zones away. B and I were also lucky to have phone conversations with our siblings.
When E and T were young, celebrating Christmas was a days-long endeavor. Christmas Day would be spent with my parents who lived nearby. In the following days, my sisters would arrive with their families for a couple of days and then we would travel to B’s parents’ home in Vermont, which usually involved a celebration with his extended family. Days and days of gifts, socializing, and eating.
With just the three of us, we scaled back on the extent of our traditional holiday fare. B did make lasagna for Christmas dinner, using Nana’s recipe. He also made fresh, artisanal bread and sauteed asparagus, followed by tiramisu for dessert. On Christmas Day, we used to have a variety of homemade Christmas cookies for dessert; we would make eight or so types, sometimes supplemented by homemade dried-fruit fruitcake and chocolate fudge. At the moment, we only have two kinds of cookies, pecan puffs from B’s family recipe and cranberry-pistachio biscotti.
Although our celebration was scaled down this year, it felt right, homey and comfortable and mostly low-stress.
I don’t know if we will ever return to a predictable pattern for Christmas celebrations. With all our elder generation now passed on, it’s unlikely that we will have big, extended family gatherings as we were accustomed. Last year, the first Christmas after Paco passed away, we went to London for three weeks over the holidays, just as the first wave of Omicron was cresting. It was complicated.
The pandemic has reinforced the lesson to expect the unexpected and to be open to change. It’s difficult because we often carve certainty and routine. The parlance you often hear is “return to normal.” For me, there is no way for that to happen – for holidays or for much of the rest of life.
So, this year I will be content with a quiet Christmas, having no idea what next year will bring but hoping I will have the grace and support to handle it.
There was a long period in the US where the dietary advice was to avoid fat, especially animal fat, in our diets. During that time, I didn’t each much butter.
This was sad!
More recently, the recommendations have changed somewhat, so I do use more butter now.
I especially like homemade bread with butter. The usual butter that I use for spreading is a spread made of grass-fed cow-milk butter and a bit of oil to keep it from being too hard.
We also keep both salted and unsalted butter for cooking and baking. B has recently discovered that his family’s shortbread recipe comes out much better using unsalted butter. I ran across an article that explained why; it has to do with the moisture content difference between salted and unsalted butter. The recipe is so old that it didn’t specify the type of butter, but may have gone back to the day when people made their own butter, which likely would have been unsalted. The recipe does call for a bit of salt. Other than that, the only ingredients are flour and a small amount of sugar.
Shortbreads are basically an excuse to eat butter, and a very delicious excuse at that!

There are some days when you just need to make a spice cake.
Wait. That is probably not true. Let me re-phrase.
Today, I needed to make a spice cake.
This afternoon, while driving home from a trip to deliver a medication to the nurses at Paco’s assisted living unit and stopping to have a document notarized stating that my power of attorney for him is in effect, after a morning spent with him at a new specialist, I was seized with a desire to eat spice cake.
It’s not one of those things you can easily buy at the supermarket or bakery, so I pulled out my Betty Crocker cookbook when I got home and set to work.
Why spice cake? It is an old-time favorite that fills the kitchen with a wonderful aroma as it bakes. When B and I were married in the early ’80s, I chose a spice cake with buttercream icing as our wedding cake, a daring choice in the age of white wedding cakes with sugary white icing. I still love the taste of cinnamon, nutmeg, and clove and find them comforting.
Spice cake stands on its own. It doesn’t need to be layered and frosted. A simple, square pan suffices.
A bonus bit of nostalgia was also involved today.
One of the things I brought home from cleaning out the kitchen in Paco’s apartment in independent living was a set of RevereWare metal bowls that Nana had used when we were growing up and kept all these years. While I had my own set from when B and I first set up house, my mother’s were heavier and the largest bowl of the three was larger than my own set.
It was this largest bowl that I used today to mix my spice cake.
It’s in the oven now.
I have several dozen other things I should be doing right now, but I am instead writing this post, thinking about my parents and home and the passage of time and what is important and the meaning of making spice cake for my family.
And breathing in the scent of cinnamon, nutmeg, and clove.
So, as I write this, it is December 25th which we celebrate as Christmas, but 2020 is very different.
I haven’t been able to post much this month, in large part because we have been dealing with some health difficulties with my father, known here as Paco. He spent five days in the hospital and, earlier this week, was admitted to the skilled nursing and rehabilitation unit in the senior community where he lives.
Because of COVID restrictions, no visitors are allowed but we have been in touch by phone. Before he went to rehab, we did have a family early-Christmas celebration, but we sent a couple of small gifts to his room so he would have something to open today.
We hope to videochat with daughter E and family in London UK this afternoon, which will be evening there. They have already posted photos of granddaughters ABC and JG in their holiday attire. Last night, we were able to watch the Christmas Eve mass from their church. While it is sad that we were not able to see them at all in 2020, technology does help.
Spouse B, daughter T, and I are spending the day at home with scaled-back gift exchange and lots of our family favorite foods, fresh-baked date nut and cranberry breads for breakfast and lasagna from Nana’s recipe with homemade braided herb bread for dinner and apple-blackberry and an outrageously good brown-sugar and maple pecan pie for dessert. B enjoys cooking and baking special meals, so he is taking the lead with all this while I act assitant. It’s nice to have familiar things in such a topsy-turvy year.
Unfortunately, the huge snowstorm we had last week that dropped forty inches (one meter) of snow on us has set us up for flood warnings today. We got about three inches (8 cm) of rain yesterday and overnight, which, coupled with at least another couple of inches from snowmelt, has led to flooding. The Susquehanna is expected to crest tonight at major flood stage level in our town. While our home should be okay, we are concerned for our neighbors who live closer to the river.
I know for many Christians around the world, this Christmas is very different than the usual celebrations, but the underlying message of peace and good will to all is still there to bring comfort to us in these troubled times. I share wishes for peace and good will, for good health and love with all of you; whatever your personal faith or philosophy might be, these gifts are universal.
